Alu Chat

5 large potatoes, peeled
3 cups cauliflower florets
1/2 cup cooked, drained peas
1 tsp. curry powder
1 cup coconut milk
3 tbsp. olive oil
1 tsp. ground coriander
a few cilantro leaves, chopped
2 tsp. mustard powder
1 tsp. cream of tartar
1 tsp. seasoned salt (regular salt is okay too)
1/2 tsp. black pepper
1 tsp. Tabasco (hot pepper sauce)
1 cup medium or hot salsa (from jar)


Fry all the spices save the cream of tartar in the oil until the
aromas are released. Meanwhile, chop the potatoes and boil. Add
the cooked potatoes to the fried spices, and to it add the coconut
powder and cream of tartar, and salsa. Simmer for about an hour
on the lowest heat possible, stirring occasionally.
