I was about to post just now when i saw Mayona has already posted. But let me give you my personal favourite.

Chachari (Mixed Veg)

Potato-2
Beans- 100gm(optional)
Carrot-2 Medium
Cauliflower-250 gm
Spinach leaves- A small bunch
Aubergine- 1 small chopped into big pieces(square)

Heat little oil and give tadka of red vhilly whole and paanchphoron(less than 1/2 tsp)

Once the seeds splatter add all Vege's.Add Salt and red chilly powder to taste. Toss them occasionally. Cook covered when water dries up. Add sugar(1/2 tsp)

Add 2tsp mustard paste while it cooks. As for the combination of veg , you can add or delete a veg according to taste.

Alu-Kopi Dalna (alu- gobhi with patla gravy)

Gobhi- 1 Medium size . Break them into big flowerets
Alu- 2 Big ones. Cut them big and length wise
1) Fry the alu and Gobhi and keep aside.

2) Give tadka- Saunf-1/2 tsp
Jeera-1/2 tsp
Tejappata-2
Dry Mirch- 1 whole

3) Add this liquid Masala after the above seeds splutter.
Jeera-2 light spoon
Dhaniya- 1 Heaped
Kali mirch- 1/4 tsp
Ginger- 1tsp

4)Add Green chillies that have been slit in the centre.

5)Add salt, red chilly powder and haldi.

6) Add Alu and the Gobhi and add 2 glasses of water.

7)Cook covered till done. In the end add this bengali garam masala on top and sugar(1/2- 1 tesp according to taste).
(Bengali garam masala- Dalchini, laung 2, elaichi- 2)

Hi,

Can anyone please give me some vegetarian punjabi recipes. We are having someone over for dinner day after tomorrow. I need some recipes that are with gravy. Also because the person is Lactose Intolerant that means nothing that has dairy products like milk, cheese or yogurt.

This person is very importent for my sister-in-law so I want the dinner to great. I know some punjabi recipes but not the once with out dairy products.

So can anyone please help me.

Hi Aparna,

Yes, agree with you. The chachari is one of my favs. also. Its easy to make and health also.

Thank u so much for helping me out. Now that the weekend is here its time for me to try out all these mouth watering dishes.

hey i m sorry didnt see this topic or think of anything before
i wanted to know how to make veg manchow soup
i cheked on net but i find only chicken manchow soup
can anyone tell me that please

Vegetable Manchow Soup (Sanjeev Kapoors recipe)
Veg | Spicy | Chinese
Method
Soak oyster mushrooms in hot water for fifteen minutes. Drain and then chop Slice the bamboo shoots and then chop. Heat oil in a wok, add chopped onion, ginger, green chillies, chopped spring onion and saut lightly. Add chopped carrot, bamboo shoots and stir. Add chopped oyster mushrooms, chopped button mushrooms, bean curd cubes and stir. Add vegetable stock, salt, white pepper powder, MSG, chopped capsicum, chopped cabbage and stir. Add chilli sauce, soy sauce and stir again. To thicken the soup add cornstarch dissolved in quarter cup of water and stir to mix well. Add vinegar mix and take off the heat. Garnish with spring onion greens and crisply fried noodles.
Ingredients
Serves 4
4 Oyster mushroom (dried)
2 one inch slices Bamboo shoots
2 tbsps Oil
1 small sized Onion (finely chopped)
1/2 inch piece Ginger (finely chopped)
2 Green chillies (chopped)
1 Spring onion (chopped)
1 medium sized Carrot (chopped)
2-3 Button mushrooms (chopped)
50 gms Tofu (bean curd, cubed)
4-5 cups Vegetable stock
Salt to taste
1/2 tsp White pepper powder
1/4 tsp MSG
1 medium sized Capsicum (chopped)
1/4 small sized Cabbage (finely chopped)
1/2 tbsp Red chilli sauce
2 tbsps Soy Sauce
3 tbsps Cornstarch
1 tbsp Vinegar
1 stalk Spring onion greens (chopped)
50 gms Noodles (crisply fried)

wud try it out
but i have one query still
if i skip mushrooms bamboo shoots vinegar and tofu
wud it still taste like manchow soup which we normally have

You can always have your own variations of vegetables you prefer to add according to your taste its will taste ok but vinegar adds a zing you can add lemon juice instead to give it sour taste if you like if not just go according to what you prefer soup will turn out perfectly because after all its homemade and fresh 😛
