I think I have it figured out guys...
Prem is super scared of emotional attachments. WHen he was flirting with Mukti, it was harmless and without any strings attached... so he enjoyed her company as he enjoyed being with a "nice gal." But the moment she told him "I love you" the commitment and the emotional attachment of that scared the crap out of him. No wonder he put on such a shocked expression and simply ran away from her, without even replying to her question. Prem/UD is afraid of emotional attachments.
He liked her and I think he still cares for her. But he probably wants to make her and make himself think that he really doesn't care a hoot about her. I think he figures words really can't hurt her... so he taunts her to make her stop loving him and to make himself think he doesn't really care about her. But it's funny he goes only as far as words -- I was surprised he tells the goon to threaten Mukti (to take back the case) but "choona thak nahi" (not even touch her) to threaten her. Why would he say that if deep down he didn't have some sort of humanity, some sort of concern for Mukti? ---- very true, I noticed "the stress" put on "use choona tak nahi"
I was really suprised by another scene. After Mukti declares to the whole family that Prem raped her, he goes and finds her and tells her it's not him. He also advices her to get rid of words such as "emotion" "love" etc. and that she's too sentimental... look at him and how happy he is without it all. He is really dirty when he tells her (after all the crap that happened between them) that they can continue what they did in Panchmeshwar again. I think the only reason he said something so low down was to make her feel he slept with her, but has nooooo feelings for her, and he would gladly sleep again provided there are no strings attached. I think he wanted her to know he doesn't care about anyone, even Mukti.
It's so interesting that whenever Prem is disturbed (like at the graveyard when Prerna begs his forgiveness, or at the disco when he learns Prerna is him mom, or before sleeping with Mukti) he screams "Don't touch me!" ---I loved the way Manoj acted out that scene, he looked soo vulnerable when he had to so show his emotions.... not many guys can pull off vulnerability soo well! bravo!--- I am usually moved by how protective he is of his feelings, and how much he tries to hide his emotions. With both Prerna and Mukti, he was forced to show his emotions and his feelings (he cries with Prerna, and he has tears in his eyes when he screams at Mukti) -- and he hates that. He was forced to show his emotions, and he probably cannot get over it so he has to go overboard to show he doesn't care. --true--
all in all, I completely agree with everything you have to say. its prem's complex and interesting character that makes him react differently in different situations. and it IS his protectiveness about his own emotions that makes him "act" mean. remember the expression when he said ... "Mother India ko thappad pade toh mujhe koi farak nai padhta" .... he seemed disgusted that Sharad was relishing the moment.... but was trying soo hard to hide it that he needed to walk away.

yep i totally agree with u broken heart.....interesting interpretation........all the evidence that u pointed out proves that he's scared of emotions and committment.....and his constant talk abt "I can't stop to live MY life coz of that drover ki baiti" just emphaisizes the fact that he's trying to REMIND himself of what his priorities should be....
and he stopped midway when saying mukti when he was talking to sharad at the party.....he stopped coz he doesn't wan't ANYONE especially sharad to know what he feels like.....
the actual conflict that UD has is with HIMSELF....he has to confront his fears and apprehensions about all the emotions that he feels....uptill now, he's just been trying to run away from them....
yep TOTALLY... the real conflict and the real battle is taking place within Prem/UD... a kind of emotional, mental war between Prem and UD, between nonchalance/apathy and care/concern/love.
I LOVE IT when he screams "Don't touch me!" Coolfire is right in that not many guys can pull of vulnerability. That's why I loved and was touched by the night episode between Mukti and Prem... it wasn't cheesy, it wasn't racy, it wasn't sleazy... Mukti fell for Prem's vulnerability, for his openly expressed emotions, for even the tears and the sorrow in his eyes. It's so interesting... Prem slaps Mukti when she tells him no one will ever love him, that he is not deserving of anyone's love... he loses control at that time but never before when she called him names, or caught his tricks, or tattled to Choti Ma. That' s his real fear... not losing the company or money or status, but that he really is not deserving of anyone's love.
