Selvi I always try to do anything in a shortcut way. 😃 Many people make the pie dough from scratch but I buy it. I simply roll it out to fit the pie dish. Yes, you will need a pie dish, a shape of the pie and oven safe. If you have that then it will be a breeze.
For stuffing, I use veggies whatever I have, carrots, peas, potatoes, tomatoes, squash, beans, cauliflower, broccoli, whatever you have or prefer and cook it in a typical indian style with all the spices. But I add fresh herbs like thyme, rosemary, cilantro, a little sage and also Italian seasoning. Sautee and cook and make sure it is pretty dry. In a separate bowl make mashed potatoes and you can add salt and pepper to it. In the pie dish put one layer of pie dough and then put the cooked stuffing. After you set it with a ladle then put the mashed potatoes on top and even it out. Once that is done then put the top layer of the dough and butter wash it. Many people do egg wash as well. You beat an egg and brush it evenly on top of the dough but I simply melt butter and brush it on top. Oh before you put the dough in the dish make sure you grease the pie dish, it will safely come out without sticking. And after you put the top layer, make some slits for the steam to come out. If the top layer is hanging over simply cut it around and press both the dough edges with a fork so that no filling can spill over.
In an oven at 375 degrees F put it in for 40 - 45 minutes or till it is golden brown. Voila, veggie pie is ready to be served! 😛 Let me know how it turns out.
If you feel 375 degrees is taking long then make it 400 degrees F. Ovens vary so adjust the temperature.
