There is also Volume II of the Bharatiya Vidya Bhavan series on The History and Culture of the Indian People, which covers the Mauryan dynasty and thus Chandragupta Maurya as well.
As for when Ashoka became a Buddhist, I do not know for I have not consulted any proper historical sources. I was not aware that there was a 12 year gap between the Kalinga war and his conversion. His rock edicts emphasise the need to respect all faiths.
But I do not think he would have waged any wars after Kalinga, for the very reason you have mentioned: there was practically nothing left to conquer.
