What I feel , she drank the coffee just to know how can anyone drink such a bitter coffee?
And I guess there is a symbolism too!
This time Arzoo drank the coffee willingly and didn't spit it out,which means she is going to drink the poison called Sahir Azeem Chaudhury on her own and not going to spit him out!
And after Arzoo Sahir also tasted it and he was quite pleased. So Arzoo will be the healer of his pain, she is going to take all the bitterness and will turn it into healing potions for Sahir!

Very good question Nads...serious answer is that this was one more attempt to know him...however she made the coffee so she should know how it will be I would guess...let that gošŸ˜†.
On a lighter note she had to drink it and leave the coffee where he could find it so we could go

I feel that is the purpose of that scene :) CVs wanted to show the symbolism of Arzoo being the "Humsafars' of Sahir through that scene😊
