IMO, people use PC talk to avoid hostility from the other side. If you're correct, presenting your views in a PC manner ensures a speedy acceptance by all the people.

Also if you're wrong or your comments might hurt someone, PC talk helps in confusing them enough about whether what you said was offensive or not.
