Them holding hands shows them countering their fear when in front of the media....it shows their support for each other, it gives them reassurance that their is someone else who share's their dream and fear so their not alone.

Plus it has been reported that female fans of Ranbir tend to push Sonam away, that's why he's being protective and makes sure they don't lose each other in the media/fan crowd
