Mione: Lol yes yes yes I've had authentic Calcutta biryani in Calcutta... And doesn't beat H'baadi biryani at all!!!! It's my least favourite though Bangaali food does come near top of my list! <3

Kolkata biriyani made in kolkata authentic biriyani shops (not home or not remade in any city) is heavenly. These biriyani shops are traditionally owned by Urdu speaking Muslims. Even bengali muslim cooks can not make biriyani as awesome as them..😆

Its not greasy, heavy or ghee socked..Its light..You can distinct two different rice color - Yellow and white..its always accompanied by a piece of potato and a succulent meat piece and sometimes egg..And the fragnance is awesome and thats the biggest plus..You do not smell curry patta or coriander leaves in kolkata biriyani..its all about the heavenly fragnance..Ah soo mouth watering..😆

So true...the Bengali mutton biryani is so fragrant. It was the first thing I noticed about it and immediately learnt the recipe for making it...rose water and kewda water are the secret ingredients alongwith with adding ghee to the rice with milky saffron. Delicious biryanis, I have adopted the milky saffron, rose and kewda water then on in all my other biryanis too.

P.S. I love cooking Bengali cuisine, tried Aloo Potol posto (twice with dal rice - its gone straight to my top 5 veg recipes cause its so bloody simple and delicious), doi maach, shorshe maach and the basic maacher jhol paanch phoron fish curry with kachcha kela and brinjal...delicious all of them ...only my family has given me an ultimatum to stop using mustard oil in the Bengali dishes I cook cause they can't stand the taste of mustard.😡 Ugh I hate this ultimatum cause it takes away from the authenticity and uniqueness of Bengali cuisine.
