Raaj Kumar and Dev Anand rejected the movie Zanjeer which ultimately went to Amitabh Bachchan and made him an over night star!!
Dimple Kapadia rejected Guddi which then went to Jaya Bhaduri/Bachchan making her a household name
Mumtaz rejected the lead role for Hare Krishna Hare Ram which went to Zeenat Aman
Ashok Kumar refused to work in Pakeezah and Raaj Kumar stepped in
Danny rejected Sholay which made Amjad Khan the great "gabbar"
and lastly many many heroines refused/rejected to play Tina in Kuch Kuch hota hai a role which truly marked the arrival of Rani Mukherjee (unfortunately Mehndi and Raja ki aayegi baraat did nothing for her career)
there are many more but these should do for now, I think mostly every one knows about Zanjeer and Amitabh Bachchan :)
