First of all I have to say that everything you mentioned is completely what I think about shiv's behavior . This was a much needed post !
From the time anandi announced to one and all how important shiv is for her and he sees her life partner only in shiv, shiv has been more confident about her love for him or the fact that his love will one day make her love him. There after each step if anandi towards him her his confidence further. Examples - she did visarjan of her memories and told him that her past is not between them anymore , when he asked asked if she can stay without him .. she blushed, when he told her that 10 days seem like 10000 (dont remember exact number) days .. She kept looking at him with love and adoration , when they met at the wedding venue.. Both were lost in each other.
If not for her conversation with sumi, we as audience were given impression that anandi has fallen for shiv .
Shiv just gathered all cues and wants to give her every happiness that a couple experience after marriage. In his heart is a desire to give all the love he is capable of giving and in his mind he thinks that she has crossed all the hurdles of her past to get to this point and this is the last one that she has to cross to get over her past completely.
Lets see how CVs have planned to conclude the situation whether shiv will finally understand her stress and slow down or whether anandi will express that she needs some time to take their relationship to the next level. My personal choice is the 2nd one for the sake of consistency in their relationship- their friendship
