Shaded text?? Did u mean those transparent text?? Well it depends on the blend mode and opacity.. Change your text layer blend mode, I usually apply overlay or darken/lighten it and then change opacity..

by shaded i mean in two colors

In a similar way u do it for a non animated one jst make sure the texture is visible in all frames and gifs also select all frames while adjusting size or using effects:)

I think u meant gradient overlay?? U can do that by setting blend mode of gradient overlay..
