Simply because every time he does so, she is reminded that he hates her and does not like her at all.
She is reminded that every time he does something nice or speaks kindly to her, he turns around the next moment and bites like a rabid dog.
She tells herself, "Of course, he is a nice person and so he does nice things, but then he remembers he hates me."
And she is sad, but soldiers on...her usual MO.

There were two reasons she signed those property-cum-divorce papers:

1. She is an honest person, and Tunveer's 'suggestion' on the eve of the wedding that this need be a marriage only for 3-months, S took as a subtle order...a part of the deal.
And she, having been told enough times she is after money, a gold-digger, and of lower-status than ARI, has enough self-respect to not let any of those accusations be true.

2. She 'knew' that ARI hated her and did not want to have him tied to her for the rest of his life.

The latter was the more compelling reason, IMO.
Even after all Tunveer said and S's thoughts on respectability, if ARI had indicated that he loved her, she might have reconsidered.
But he does good, then turns around and barks at her. So she steeled her heart and signed.
She was doing it for him.
Because he hates her.
She can at least give him his freedom.
