I think she is smarter than we might think. Her aim is not to get Manav married to Sonali, but to get Manav to leave CC. She is using the 'fact' that she wants Manav to marry Sonali in order to create fights and misunderstandings between CC and Manav. Naturally, CC will want to find out what is happening, and the more she digs into things, and doubts, the more UB will use her emotional drama to tell Manav that CC does not consider her as family, and this will create more fights.
That's my thoughts, but as usual, CVs will surprise us, I'm sure!
