hi,
the masala and method given for the mahe khalia are the same as those used for mirchi/baigan ka salan.
if ur using baingan, u just make slits in them and saute them whole in the oil b4 adding tadka things to the oil and then keep them aside. Add the fried baigan to the salan b4 adding the tamarind juice, let them cook till they r soft and then add the tamarind juice.
the mirchi is also made the same way, except u make a slit in the mirch and deseed them and u dont add red chilli pdr to the mirchi salan.
u can also add fried whole tomatoes to the salan.

if this isnt clear then i'll post the whole detailed recipe.
as for veg recipes....... a hyderabadis idea of veg is eating eggs :D
i have a few recipes and will post them ASAP
