I am unable to understand how these people can make such a exotic and complicated name of dishes which I never heard of..are they given the recipes before hand or wat??

Like Japanese food...who has not made any Japanese food before how can someone make n name their dish so good??

They go through training sessions. No matter how good a cook you are, you may not have used techniques like foaming, blast freezing at home.

Also, look at everyone making perfect caviar, tuille, etc.

Also, everybody knows what ingredients are used in other cuisines or dishes from other cuisines. They go through boot camps and are given some information about regional cuisines before the shoot.

I consider myself well versed with a lot of international cuisines and I wouldn’t be able to cook many of them. I wouldn’t even know what ingredients are used in lesser known cuisines.

There is training involved for sure. I am a Hospitality graduate so I can tell for certain a lot of the stuff they make can only come from practice. Today’s egg challenge is basically the first semester of Food Production.
