Amitabh was around 61 or so when he did Baghban. Definitely not old enough to be dad of 4 grown up, married sons and grandfather of Rimi Sen. Hema was almost around age of Khans now or a tad older in her late 50s when she played granny in Baghban.
Filmmakers cannot do much if stars are unwilling to act in older roles or share limelight with several other young actors.
Dilip Kumar and Raaj Kumar had to play grandpas of Manisha and Vivek Mushran in Saudagar though the film is more about their friendship than the 'dada' part.
Given the kind of success Khans, Kumar have enjoyed and kind of narcs they are having sustained for so long, I doubt they will agree to make compromises on fees or footage anytime soon.

Ultimately they will have to do more films like Dangal, TZP, CDI, Mission Mangal or how Raaj Kumar played professor in Bulandi in case they do not want to be grandpas or dads of grown kids onscreen. Or maybe attempt to play doctors, politicians, scientists or detectives etc.
They have not suffered crisis or downfall like Amitabh nearly went bankrupt after failure of ABCL. Amitabh's failures taught him a lot and made him desperate enough to do anything he was offered. His family found TV below dignity for a star like him but he struck gold with KBC unexpectedly.
Khans, Kumars, Devgans etc have not seen such bad days so they will probably not be desperate enough to compromise on fees or kind of roles they get.
