Because it was heartfelt and she made sure to get a promise from him that he would not only not speak like that to her but to anybody ever again!

She didn't just accept his sorry without a reasoning and was strong in rejecting it which is why we heard her say "Nahi chahiye aap ki bheek ki sorry" but once he admitted what his trigger was she was able to forgive him.

It wasn't just about a sorry. It was something that was maligning his image in her head. She was expecting good from him. She was disappointed in him. And now since she has been proved otherwise, she is all good again.

It just shows that he really needs to be loved and appreciated from thr basics. The fact that he reacted like this just for a bar of protein, imagine how he will react when she starts fighting for his corner
