1) If he had to guess he probably figures nothing much has happened. Despite her agreement to a contract marriage, Sanam is still a conservative girl, and he knows that.

2) Whether anything has happened or not, it is not what his issue is. He doesn't care and still wants his marriage with her to be real and makes effort after effort. What bothers him is seeing her still with Rehan, giving him the impression that she plans on going back to Rehan. And even then he is still taking effort and trying his own ways and methods to have her also accept this marriage as real. He is still fighting for the girl so to speak, but in subtle ways.

Obviously he would realize she hasn't been with anyone (but really he probably already figures that) and that would affect how he goes about with her during intimacy. But any apology, or acceptance/realization of his mistake/misunderstanding should come from the fact that she has no feelings for Rehan nor did she know about Rehan's feelings. "Untouched" or not shouldn't factor in. She could be (and would most likely be) "untouched" even if she had feelings and had something going on with Rehan.
