2. The word you want is not "bipolar" but "inconsistent" or perhaps "nonsensical." Characters that are actually bipolar are usually complex and interesting to watch, or other times reduced to stereotypes of insanity. But the flip-flopping you are describing is normal dramatics, not bipolar.
