SWEET POTATO PUDDING
Ingredients

unsalted butter, for greasing
160g/4oz self-raising flour
160g/4oz caster sugar
160g/4oz unsalted butter
3 eggs
ONE sweet potato, diced and boiled until soft ( i pressure cook it)
2.5cm/1 inch piece of ginger, peeled and finely chopped
For the ginger syrup
110g/4oz caster sugar
10cm/4 inch piece of ginger, peeled and finely chopped
1 orange, peeled and segmented, to serve

Method
1. Grease a small pudding basin with butter.
2. Place the flour, sugar, butter, eggs and sweet potato into a food processor. Blitz together until smooth and combined.
3. Pour the mixture into the bowl and cover with cling film.
4. Place in the microwave and cook on HIGH for four/five minutes (till it is done)

ginger syrup

To make the ginger syrup, gently heat the sugar in a heavy-based pan and cook over a low heat until dissolved and a caramel has formed. Add the chopped ginger, shaking the pan until it is well coated in the caramel.
Turn out the sponge pudding onto a serving dish and drizzle the ginger syrup over.
Garnish with the segmented orange and serve.

Jas ... really this was easy and yummy ... and my gals were the ones really enjoyed it 😉

Sup -
Hope your kids ended up with a good trick or treating collection.
Oh mi gosh.. we have plenty of candy now - a lot of the sour ones (just what she likes!!) and the peanutty stuff.. plus the ones that I bought from the store. I'm so scared of my li'l one hobbling it all up in the next few weeks. Hope we won't need to make an emergency trip to the dentist 😆. She was Snow White this time. What were yours?
Take your time in posting the pics with the recipes..

Jazziee..
Thanks for looking it up..It's gonna be really useful.
That's why we love you.. for all the research you do.. 😆
Your pumpkin soup recipe sounds so good.. and I'm sure will taste good too..
Nice hot soup in the winter..yum..
I still have 4 tiny pumpkins left from Halloween.. not really sure how much flesh I can garner from it..
Would your recipe require about 10 cups of pumpkin, you think?

Eljay -
We are having some elderly relatives visiting us around Thanksgiving.
I know in their home they usually have proper Thanksgiving dinner the American way, with their grown up children.. but this time they are going to have dinner with us.
I'm so glad that you brought this up. I don't have a proper vege menu for Thanksgiving (besides my "roasted pig" vadas) 😉. I just read that you are vege too. Do you know besides the Pumpkin soup, what else can go in a American Indian "Vege" thanksgiving?
My daughter is excited about the real deal this year.. 'cos at school when the other kids go over their Thanksgiving, my li'l one simply used to make up her own turkey stories 😆 Poor thing!

'

Your pumpkin soup will be tested soon, maybe this weekend itself. 'i will let you know how it turns out.

Hey what's palams and viss ... Doesn't even sound like Tamil!
My Samaithu paar has Aazhakku measurements.. and I simply take it to mean "a cup".

After all that's going on with the Sweet Potato pudding over here, I'm so tempted to try it for Thanksgiving or may be even sooner.
We get both Sweet Potato and Batata (that's how they call Chakkarai valli Kizhangu here). Which one's better Jazz?
Does it make a signifiant difference if the flour is self raising? Or will regular all purpose flour do?
