Shahi Paneer
Shahi Paneer is paneer (cheese) with a rich creamy sauce. Other variations of this dish you can try with mixed vegetables and peas.
Following is the recipe to make home made Paneer, if you are going to use store bought paneer then skip down to the masala.
32oz. of Ricotta Cheese Whole Milk
1T. Coriander ground (dhania)
1t Paprika
1t Salt
1t Jeera ( cumin seeds)
Mix all ingredients, place in a corning dish or a glass dish with cover in a small dish so that the mixture is at least 1 inch to 2 inch thick. Cover and microwave on high for 10 mins. Stir the Mixture after 10 mins and microwave for another 10mins. Let cool, cut into pieces. Since microwaves are different, check that the mixture looks cooked and thick, should not be runny.
In the meantime... while the Cheese is in the micorwave.
Masala
4 T Oil
7 Cardomon green pods
1t Cinnamon
6 cloves
1 C Onion Masala (see post 1)
1 T ginger paste
1 t garlic paste
1 green chilli
2T Coriander ground
1t Paprika
1t Turmeric
1/2C Yogurt
1/2 Pint Whipping Cream Heavy
Heat oil add Cardomon, cinnamon and cloves, cook for 1 min. You will have the aroma of the spices in your oil.
Saute the pastes in the oil add green chili, cook until oil seperates from mixture. Add water if needed the mixture should be thin, consistency of milk. Add salt to taste. Pour this mixture over Paneer and bake in the oven 350 degrees for 1/2 hour or until it heats through. You may do this in your microwave too. Add Cashews, pistachio and raisins if desired.
For the vegetable paneer add 1 small packet of frozen vegetables to the masala, cook to warm the vegetables and pour over the paneer.
Start to finish this dish is made in 25 mins.
