Aloo parwal ki sabzi is also known as allo potol in Orissa. Parwal is one of the lesser known vegetables of India but we cook it regularly. I had an earlier blog post of bharwa parwal or stuffed parwal. Parwal is both delicious as well as nutritious being green vegetable.

Recipe of aloo parwal ki sabzi

200 gms parwal (pointed gourd/parval/parmal/potol)

2 big potatoes (aloo) - peeled and cubed

2 tomatoes

1 onion

1 inch piece ginger

3-4 cloves garlic (optional)

Salt to taste

1/2 tsp turmeric powder

1/2 tsp red chilli powder

3/4 tsp coriander powder

1/4 tsp garam masala powder

1 tbsp oil

1/2 tsp cumin seeds

A pinch of hing (asafoetida)

Thanks kamna parwal ka pura biodata likh dala i start thinking for its marriage wid aalo 🤣 .
I know parwal and eat it also.
Sirf ingredients likha hai banane ki recipe bhi doh.

aloo parwal ki sabzi
1. Heat oil in a pan, add the potatoes and let it fry for 5-10 mins, till it gets a brownish color.
2. Remove and drain d excess oil in napkins if required. In the same pan, with the remainig oil add the cumin seeds and let it splutter.
3. To this add the onions and saute for 5 mins till it gains a pink color, to this add the parval, the fried potato, and the other spices.
4. Once the spices are distributed consistently, cover the pan with a lid and let it cook over medium heta, stir occasionally to ensure that theres no sticking.
5. It will take another 15 mins for it to cook completely.
6. Remove from heat and serve with dal and rotis.
