The following top five scene are, what I believe, moments where Arnav defied Khushi's perception of him as a 'rakshas laad governor' and showed his sensitive/ human side.
1. "Meri Iss Duniya Se Koyi Matlap Nayi Di...Meri Asli Duniya Tho Aap Ho"

I can't even begin to explain how important this scene is to the entire storyline. For my purpose, this scene is the first time Khushi has ever seen Arnav express any sort of emotion besides anger and indifference towards someone. She always believed he is an insensitive, ruthless man- which he is- but she finally sees the cracks in his impenetrable exterior when it comes to his di- the center of his universe.
For an emotional person, who holds her family in the highest value, Khushi innately understands that this man who boasts about 'paisa' and 'aukaat', is the same as her-- his life is his sister. And that is something that sticks with Khushi throughout the entire show.
2. "Aap Bohot Ache Hai...Aab Mere Papa Teek Ho Jayenge Na?"

So Khushi knows Arnav will do anything for his sister, but he is still a 'shaitan' to the rest of the world. WRONG! In this scene, she is shocked to see that the person who helped a crying little girl fulfill her wish was none other than ASR himself.
His interaction with the little girl, his sensitivity, thoughtfulness, and the selfless of his gesture touched Khushi, an altruist to the nth degree. Additionally, she can sympathize with Arnav since they both lost their parents, and know how much helping a girl wish for her dad meant to her. It's the first time she's seen him do something so kind for a complete stranger, and reinforced her belief that he is not as cold and apathetic as makes himself out to be.
3. "Sorry...Uss Raat Sheesh Mahal Mein Mujhe Khushi Ki Baat Maan Leni Chahiye Thi"

(start at 5:00)
At this point, Khushi knows that Arnav is not as heartless as he appears. But his ego is the size of the asteroid that hit earth. The man has the hardest time saying sorry for the smallest thing. So imagine her surprise when he apologizes to HER sister for ruining her first marriage, and vindicates Khushi from all blame.
Let's repeat- (1) Arnav Singh Raizada is apologizing for such a colossal event...he is owning up to his blunder, (2) to her sister- someone who below his 'hasiyat' and someone he insulted quite a few times previously.
He is slowly and unintentionally allowing her to remove the layers that guise him.
4. "Aur Ye Meri Patni Se Bathameezi Karne Ke Liye...Ye Dono Insaan Mere Zindagi Mein Sabze Zada Important Hai "

Um, how long have we been waiting for this with bated breaths? Khushi puts everything she values on the line to expose the truth about Shyam without any proof, and a sharp lawyer breathing down her neck. All she wanted was for Arnav to believe her. And he does. But what she doesn't expect was a slap on her behalf- for her honor, for all the torture she's been through because of that slimeball. And to top it all up, he verbally equates her to his most cherished person, his di. It can't get bigger or better than that.
This one action alone gives Khushi the strength and safety she was yearning for (and deserves) after the emotional and physical turmoil she's been through.
5. "Dekha Devi Mayya, Arnav Singh Raizada Mandir Mein...Lekin Aap Itni Khush Mat Hoyega, Kyun Ki Arnavji ye sir Hamara Liye Kar Rahe he"

So Khushi found out that (a) his heart is not made of stone, he cherishes his Di above all else, (b) his selflessness isn't limited to his di, he can help strangers as well, (c) he is not beyond apologizing to people close to her, (d) he is not beyond acknowledging her family as his regardless of his never-ending lectures about class and wealth, (e) he holds her in the same esteem as his sister and would do anything for her (e) he is willing to put aside his staunch atheism to get permission from her #1 confidante and entity, Devi Maiyaa, to marry her. Only because he loves her that much.
And so, Khushi Kumari Gupta stripped ASR of all his layers to find Arnav. As Buaji said, 'Sanka devi ne tho unhoni ko honi kar diya.'
Notable Mentions
1. Salman Khan dance- Ok, I admit this definitely has to be on the top five. Arnav dancing is big enough, but to dance to her fav actor's song (that too that horrible towel dance) is a big deal. Plus, he proposed. But, I don't know- I think this sequence (Khushi's expression, the proposal, their reactions) could've been done a lot better.
2. First time Arnav says sorry to Khushi- Definitely another HUGE scene b/c of the high load of emotions in the scene, and Khushi's surprise that he apologized. Tbh, it was between this and the scene with the little girl and the pigeons. I chose that over this, because this list is about the times Khushi was impressed with Arnav, not the audience. Granted she was definitely surprised and touched by his unexpected heartfelt apology, his gesture towards the little girl probably left a greater impression on Khushi because she always puts others before herself.
3. All other rasams- Roka when he told her to stand on his right, and allowed Buaji to tie the raksha-daga, putting mehndi on his hand etc. all impressed and overwhelmed Khushi, but I chose the Khuldevi puja because it involved Devi Maiya, and the temple-- compared to the other gestures, this one probably meant the most to Khushi.
4. All the times Arnav stood up for Khushi (esp. to his Dadi, during Mrs. India etc.)
5. All the times he took responsibility for her family- He bought all the ration for her house when they stayed there stating he is allowed to do this as their son-in-law, he bought the house for her etc.
Note: I don't include anything from the last two arcs of IPKKND unless I think they are extremely significant. Oh, and I like to pretend Aarav and Sheetal never happened.
