She's just too naive. She always shuts the bad things out in her life. She wasn't given solid proof about her husband, so its natural for her to act the way she is. Shes loved her husband with a passion, shes insecure, she hates seeing her happiness go away...so she's finding a way to all that by meeting Shyam slyly. And lets not forget, Shyam is to be blamed also- he knows Anjali's weak point and can manipulate her to any extent.
