I guess love in the sense of romantic love has never been Gauri's priority anyways.
For her, this relationship is chosen by Shankar ji, who is like her godfather, so she will do anything to protect Omkara, but she would never force herself on him. In DBO there was no love involved, of that I'm 100% sure.
In IB, she got to see glimpses of the real Omkara, her thought process became more like she likes the man that Shankarji has chosen for her. Now its no more only about saving his life or taking care of his needs, she wanted to make the relationship work.
Thats why the lines during break up "humne aap ko har baar maaf kiya"
Because she genuinely wanted to move ahead and make it work. Thats why she learnt English too, her imagination always had Om accepting her, never confessing his love or something.
For Gauri acceptance is paramount, because that's validation of her faith, her visvaas on Shankarji.
Even now she has freed Om from the relationship, not herself, she still thinks Om is her husband.
Gauri's love or whatever it is, is very spiritual and pure, its not romantic or intense. At least not in my eyes.
