You are confusing it.
Om didn't want to write the letter because his way way expressing is completely different from Shivaay.
He does it in a poetic way which is not Shivaay like.

Om meant that his expression style is poetic and so whatever he writes will be too... And that's not how Shivaay speaks or expresses himself!

Basically he wouldn't be the right person to write a letter supposedly from Shivaay!
