same pinch even I started baking... this year as we bought a new oven...my cakes taste too good but the problem is they do not look like a store brought one...it looks flat...not dense...it is not airy... but it's spongy... it's been two months since I started baking...poor my family must eat it always...

Self raising flour will make it airy and a properly heated oven
You need to whip the air in and not lose that air as well
My middle never gets cooked and I burn a lot of my stuff
Start with cupcakes so you can practise, that's what my focus is then I'll move to big ones

may be it's because I'm using all purpose flour (maida)...well I need to buy cupcake tin...actually I already tried mug cakes ;-) but it tasted average... can you tell me the difference between pastry cake and a normal cake?

You need sef raising flour for cakes so it rises
Else you need to add a raising agent to normal flour

I've done mug cakes too, I don't like them either.

Pastry cake? What's that.

Cakes change according to the flour and any thing else you add. Some cakes are heavier in texture than sponges which are light because of the raising agent.

That seems to be just a cake, a sponge with lots of cream.
Pastries are like croissants and stuff. They are made differently.
Check that the baking soda and bicarbonate of soda etc is the right amount.
Some are for scones and some for cakes. You may not need both agents in one cake

hmmm yes, my baking powder and soda are good new one.. so cakes cannot be called as pastry right
