yeah...ours is simpler...our filling is pretty much boiled potatoes, desi chick peas (the small brown ones), kala namak, namak, red chilli powder...thats it.

we also don't use the sweet chutney in our gol gappe...its just t he spicy water and garlic+crushed chilli chutney..
