What is it about Jane Austen's books that people rave about? Perhaps I am lacking the needed intent but I tried reading Pride and Prejudice and found the language difficult to follow and the story was moving really slowly at least in the book. Can anyone suggest the most simple book by her that will not make a layperson feel like they're in over their heads?

I know that feeling. Price and Prejudice is really a slow moving book. Because in my opinion it deal with education, manners, marriage and morality from the English society. All of these issues are still current but are seen under a different ligh now maybe. But to really understand the book is not that hard.
And when it comes to language, it has been written in the early 19th century which nowadays might be considered a bit of weird English sentences.

I dont think Jane Austen has any 'easier' books to read. Pride and Prejudice is one of her most famous books. But maybe if it is slow for you maybe this kind of book isnt for you. Look for what themes you like and research a little on the internet to find an interesting book that suits you. :))

Have you read the whole book? Well, if you haven't then don't give up on it. Once you get used to her prose, it woudn't be that difficult. All her books are written in the same style. It's more about the characters and their conversations than the plot. Try northanger abbey, parody of gothic romance. That one's a fun and little easier to read.
Still if you don't get her, that's okay. Her readership is divided into two. The one who love her, and the other who either hate her or doesn't get her. :)

But I've never heard anyone talk shit about her books like they do about, say, Twilight ... poor example I guess, but you know what I mean. Whoever I come across, if they've read her books, they have loved them. No one yet to say oh man, I couldn't finish that book. Certainly boggled me cuz I couldn't finish it ... I agree that it's probably not my type.

I was actually referring to goodreads site. There are mixed reviews on the book. But you are right, most people love her.
Why don't you read those reviews, you might understand why people love her so much. Or you can do some background research on 18th century lifestyle,if you are having difficulty to connect with the story. Or most easiest way, break the rule-watch the movie first, get warmed to the story. That would make the book easy to read, may be.

The book's language is of 18th century which might not adjust with many and also its very slow which I agree to an extent as I have read the book.
I know this might sound weird I would suggest you to the movie based on this film starring Keira Knightley.
You would get an idea
