haha... aaloo is married to every sabji... nice oneπŸ˜‰
 
well for me, i dont really eat aaloo that much, but when i do which maybe like once a month or even lesser, i dont mind eating aaloo bhajiya's and also the german dish of rosti (pan fried grated potatoes often served with sausages and blue cheese)... i tried rosti for the first time when i went to the german restaurant called Marche's... i dunno if there are any other outlets anywhere in the world, but yeah, i think there is at least one in vivocity, here in singapore...
 
anyone else likes rosti??

i use potatoes as a jacket potato and eat it either with beans and cheese plus butter or cheese potato pie in which the potatoes are mashed up with butter and milk seasoned with salt and pepper

@Neha.. i do!.. And to make it even better, it is insanely easy to make..It's my comfort food..much to the chagrin of my treadmill...lol

Apart from all the desi versions of potato dishes, im a fan of The Potato Gratin....it's french, and therefore has zero mirchi... i saw the recipe on bbc food , and then got an equally simple one online.

Follow it exactly .


Ingredients:

  • 2 to 2 1/2 pounds red-skinned potatoes
  • 2 tablespoons butter
  • 1/2 cup diced onion
  • 2 small cloves garlic, minced
  • 1 tablespoon fresh chopped parsley
  • 2 tablespoons flour
  • 1/4 teaspoon pepper
  • 1 1/2 cups milk
  • 1 cup shredded sharp Cheddar cheese
  • salt and pepper, to taste

Preparation:

Peel potatoes and slice thinly. Rinse and cover with water in a medium saucepan. Bring to a boil; boil for 2 minutes. Drain and rinse with cold water to stop cooking.

In a saucepan, melt butter over medium-low heat. Add the diced onion and saut until tender; add minced garlic and parsley. Stir in flour and pepper until smooth. Gradually add milk, cooking and stirring over medium-low heat until thickened. Stir in cheese until melted and sauce is smooth.

Arrange sliced potatoes in a 2 to 2 1/2-quart casserole, sprinkling layers with salt and pepper. Pour sauce evenly over potatoes. Cover dish and cook at 350 for 40 to 50 minutes, or until potatoes are tender.
Serves 4 to 6.

i got a cheese potato pie recipe

Cheese and Potato Pie

800g (2lb) potatoes

25g (1oz) margarine

100g (4oz) cheese

A pinch of salt (for the potatoes)

Ovenproof dish to make it and take it home in.

 

Method

1.       Peel the potatoes; wash and cut up into small even size pieces.

2.      Place in a saucepan of boiling water, cook for 20 mins until soft. Add a pinch of salt.

3.      Grate the cheese onto a plate.

4.      Strain off the water and mash the potatoes.

5.      Add the margarine and mash again.

6.      Stir in of the cheese.

7.      Mix well.

8.      Place in ovenproof dish. Use a fork to decorate the top.

9.      Sprinkle with remaining cheese.

10.  Place under a hot grill until evenly browned.

11.   Serve hot with salad or vegetables.

i love potatoes....heres a recipe..
spring onion and aloo paratha
finely chop a bunch of spring onions .
boil and mash 3 medium potaoes.
make a chutney of ginger garlic green chillies salt  zeera and a few coriander leaves.
add to the mashed potaoes along with the chopped spring onions.
roll out chapati dough and smear it with ghee or oil...roll it to make a roll and then coil the roll and flatten it between ur palms...
keep the filling on this flattend disc.
roll out dusting with flour once in a while and roast on both sides with some oil or ghee..
serve with plain yogurt and green chutney..

aloo in chutney
1.roast 2 tomatoes on open flame until the skin becomes black and strts to come off.peel them roughly and keep.
2.roast some green chillies as well on open flame .remove the ends.
3.peel about 7-8 cloves of garlic(or accrding to taste).
4.churn the above things in a blender with some salt..
5.add peices of boiled potaoes in this chutney and serve.
goes best with plain rice and fried fish.
