ingredients
spaghetti bajiya/bajji
cooked dal
Tamarind sauce - small lemon or gooseberry sized ball
cooked Mixed Vegetables sauce
Sambar powder sauce
Turmeric powder sauce
Salt as required
red chillis sauce
tomato sauce(3 cups crushed tomatoes)
olive oil
Mustard seeds -1 tsp
Hing - a generous pinch
Fenugreek seeds - 1/2 tsp
Red Chilli - 1
Curry leaves - few
first preparation of spaghetti bajiya
ingredients:
boiled spaghetti
gram flour -1 cup
Chilli powder - 1-2 tsp
Cooking soda (sodium bicarb) - 2 pinches
Oil - 1 tsp
Oil for deep frying the bajjis
prep of spaghetti bajiyas:-
In a bowl mix together flour, chilli powder, 1 tsp oil, salt needed and cooking soda.
Add water and mix it nicely for 2-3 minutes. The batter should not be too thick nor watery. It should coat the vegetables well when dipped in to it.
Heat oil in a kadai. (to check if the oil is hot enough to fry don't keep ur fingers r hands on d pan )
Once the oil is heated, reduce the heat to medium. Now dip the thinly sliced spaghetti in the batter and drop it gently into the oil.
Fry both sides until golden brown and remove it from the oil using a slotted ladle. Keep them in a paper towel to drain off the excess oil.
Repeat the same process for the rest of the spaghetti slices.
method of main preparation
Heat a tbsp of oil, add mustard seeds,when it splutters,add hing, red chillies, fenugreek seeds, curry leaves, for a few minutes.Then add tamarind water,turmeric powder,salt needed and sambar powder.Let it boil until the raw smell of the tamarind and the sambar powder goes. Approximately it will take around 10 minutes.
Meant time pressure cook dal, keeping the mixed vegetables in a small container. After the raw smell of the tamarind and the sambar powder goes, add the pressure cooked vegetables to it.
You can use any vegetables like beans, carrot, cauliflower, potato,brinjal, broad beans but do not add too many vegetables, then you will end up having more vegetables and very less sambar flavored pasta.so 1/2 carrot,3-4 beans like tat can be used.
then mash d dal n vegetables with a masher n make separate sauces of both.
so all d ingredients ready now
simple
take a large pan n add 3 tsps of olive oil n add spaghetti bajiyas n all d above mentioned sauces n mix well n cook for 10 mins n garnish it with artistically nicely choped tomatoes n curry leaves n can add innovative addings also
