I'm very happy to notice the absolute trust that Aham now has for his wifey, the confidence with which he said that Gopi could not have taken Jigar's mangoes... Can any of you, guys, please, remind me when exactly the u-turn happened in Aham's feelings for Gopi...In which episode did it take place...

There is no absolute U-Turn.. That is the beauty. He has come to trust her gradually but surely. I think the first time was when he decided she was telling the truth after the cheating incident at school. He went against his mom to take up the task of educating her as he believed she could never have cheated.😛
