I do not know names of hotels. But from RP's one iv it seems this year they did not go to Udaipur and that implies other years they shot in Udaipur.

Abhimanyu & akshara got married in samode palace , Jaipur.  

Naira & kartik got married at udaipur palace , udaipur. 

Gangaur is mostly their set ..not any specific location.

Yeh Rishta Kya Kehlata Hai at the picturesque five-star heritage property in Samode village near Jaipur. Lavish sets have been erected for the wedding sequence being shot at Samode. The crew even shot a romantic song in an old marble slurry dumping yard at Kishangarh.

And as for Kaira's wedding that was happened in Bikaner Rajasthan...

And introduction of Abhira and older Akshara was shoot in Mahabaleshwar and Matheran ( Not the real masoori)
