For todays challenge I would’ve marinated paneer in cream, garlic and spices. I’d later add finely chopped moringa to this mixture as well. I’d put a layer of the marinade between two layer of paneer (like a sandwich) and grill it and serve it on a bed of muhammara. I’d sprinkle a little moringa leaf dust on this. Since Muhammara has sweetness from pomegranate molasses and grilled red pepper, it would cut through the bitterness of moringa. Also the marination of cream and paneer would mask the bitterness. I’d serve this with a multi seed lavash. I’d try to use red lentil flour to make the lavash. The seeds would be - flaxseeds, chia seeds, sesame seeds, sunflower seeds.

On the side I’d serve a salad with lettuce, apple, tomato, cucumber with a moringa oil and lemon.

My ingredients of choice would’ve been - Jalapeños, oyster mushrooms and Parsnips.


I would’ve made tacos - stir fried the mushrooms with spices, assembled the taco with mushrooms, bell peppers, onions, corn and made a guacamole like sauce with boiled and mashed parsnips, cilantro, jalapeños and onions. 80% of the filling would be mushrooms.


I’d serve this with a side of red bean salad, added slivers of Jalapeños and finely sliced fried parsnips for crunch.


Alternately I’d have chosen and made -

Pipli, madras cucumber and Mango ginger.

I’d have made a hung yoghurt filling with grated mango ginger, corn, finely chopped green pepper, onions, carrots and flavoured with pipli. I’d make a roulade with the madras cucumber and fill it with this mixture. For the side elements - I’d make a mango ginger sauce with egg whites (similar in texture to a hollandaise) and pour it in the centre of the plate and top it with lightly tossed vegetables or fish with just a hint of pipli.

For the team challenge my menu would be-


1. Kathi kebab - I’d half make the wraps, so at the moment of order it needs just about 30 seconds. The filling would be Chinese style - chilli paneer or chilli chicken served with a Schezwan mayo dip.

2. Dhabeli - this would be a dhabeli meets quesadilla. A Mexican filling and served with a chilli sauce, guacamole and alioli

3. Mirchi pakoda chat - besan batter fried mirchi pakodas served with chutney’s, yoghurt and crispy sev. The innovation will be in chutneys - pesto sauce, anardana and tamarind chutney.

4. Dhokla - paneer sandwich - a dhokla layered with grilled paneer, pidgins chutney, ketchup.

The dhokla sandwich and mirchi pakoda chat will be served at room temperature, so I’d save time while plating.
