Her reaction was quite OTT. I get it, she loves her sister Aaru, so does the other Goenkas. They were also worried but no one lost it like her. It’s too much. Her reaction should have been a little controlled by writers.
Since the topic is about psychology then as a doctor, Abhimanyu recognised severe separation anxiety disorder while he was talking on the phone with his Akshu.
He brought Aarohi back because Akshu may suffer from more withdrawal symptoms if her sister is absent.
Abhimanyu has resigned to his fate.

From my understanding as a psychology major, what Akshu's been exhibiting signs of is post-traumatic stress disorder, not separation anxiety.
The DSM-5 (diagnostic criteria for psychiatric disorders) contends that separation anxiety patients must meet at least three of their criteria. Two major criteria are the reluctance to make decisions involving distance and the inability to withstand periods of separation from __________, especially if those periods are 4 weeks+. Akshu herself chose to live away from home for three years and did so relatively, successfully - had her separation anxiety been so severe, she would not have lasted that long. As Akshu has said many times, she knows what it feels like to be alone but she endures that loneliness. Moreover, she would dread (show physical symptoms, nightmares, etc) major life changes that create distance from Aarohi, like marriage but she's satisfied. Akshu's problem arose with Aarohi's disappearance from the city, where she cannot maintain contact with her. The distance was okay, uncertainty about Aarohi's wellbeing isn't and that's what triggered her today.
Akshu witnessed a great deal of trauma as a child and the same influences her to this day. Her panic attacks are directly related to memories of that trauma (Sirat's death, Aarohi's accusations, and the delicacy of their relationship). The moment's where we've seen Akshu at her most vulnerable are when her loved ones are at greatest risk (repeated exposure to the aversive stimuli, DSM-5's second criterion for PTSD) - she admitted her feelings under the impression that Abhimanyu would harm himself, the first time she and Abhimanyu had an honest and long conversation was Manish's near-death heart attack, and today we see her in ruins because she's afraid Aarohi will be hurt. In today's episode, we've seen her dissociate a bit as well. She indulges in persistent and exaggerated negative beliefs of herself (attributing everything that goes wrong to herself - "Aarohi left because of me") and cognitive distortions that render her ability to understand consequences inadequate (hence she took the blame in front of the police); criteria 4b&c.

I am not a qualified therapist neither in charge of assessments. The DSM-5 diagnostic scale does not fit all cases. There are borderline separation anxiety issues which overlaps or co exists with other diagnosis.
For ex. Akshara's panic attack range from mild to severe. She is a cusp and does not fit perfectly into any text case as such.
If you observe her expressions today, they were similar to mild hysteria which eventually can lead to a break down. Her anxiety stems from Sirat and her daughter. When it comes to herself she manages the situation well. However at any given point and time her sister should not be effected then the symptoms surface.
