I'm almost halfway through Norse Mythology. I think reading The Song of Achilles is the best chance you've got of enjoying mythology. Circe is good but it's very slow. And Norse Mythology is not written as a single story but several little information given in small chapters in the form of short stories. Also it's written to be readable for children, so that's something you should consider before picking it up. You might be familiar with some names like Thor, Loki, Odin, Frigg, Jotunheim, Mjunir, etc. if you have watched the MCU movies, but the stories surrounding them is quite different. Some of the names (that were previously unfamiliar to me) are very difficult and I won't be remembering them all in a single read.
Although, I have to say, I'm liking the stories. Then again, I usually enjoy mythology, so that might be whyđ I personally liked (loved!) Madeline Miller's books way more than I'm liking Gaiman's.
