Ok ill tell you based on how much i know
E is basically used to connect to words together in Urdu and it means of...i have no idea why they called Jaan e Alam as Alam instead of Jaan while the other brother was called Shaan...but Jaan e Alam and Shaan e Alam are both first names, not surname. As for Dur e Fishan, I have no idea why she spells it like that (maybe she changed the spelling just for dramas)...but the actual name should be Durre Afshan which means scattered pearls. Durr means pearls and adding an E to it makes it plural, so Durre means pearls.
Its not Noor U Saba I think its either Noor Ul Saba or Noor us Saba...and US and UL are both used in Arabic so I dont know much about that language. E is used in Urdu.
Awida speaks Arabic so I think she would be able to tell you.

Ok so the arabic words us and ul mean 'the' or 'of the' rather than just 'of'. The name Noor us saba means light of the daybreak.

Thank you Hinna for explaining it very well. I have nothing to add except that in Arabic (al) is added to names specially in genetive .. like : Noor ul Saba , or Shams ul Doha. Also since in Arabic the last letter of the noun have an added voice to suit its position in the sentence , so for Subject we add (u) , ex. Ahmadu , Nooru .. if they come as Objective it becomes : (a) : Ahmada , Noora . And in the genetive in becomes (i) : Ahmadi , Noori .. for this .. Noor (u) al_Sabah.. becomes : Noor u Ssaba.. (the added (s) is insteed of (al) for some phonetics rule in Arabic , if it was Noor ul Qamar , we don't need to repeat (q) )
So we say (al , ul , il ) for (the) and Urdu in becomes (e) . I am not sure if (e) in Urdu is like (al) or (the).. or is it like apostrophy ( 's)..😕
