I'd recommend three. These are my favourites! These have such layered stories
1. Khaani- Watch it for the madness of Mir Haadi and the angst of Khaani
Khans are often tagged as brave and headstrong community in our society. But our central character Sanam Khan is a pragmatic girl; even her younger sisters consider her as a coward person and tease her with the title "Khaani". Her one and only brother Sarim is soon to be graduated and has to share the burden of house members.
On the other hand, Mir Hadi, a rich brat, short-tempered fellow and belongs to an influential family. He somehow gets the clash with Khaani’s family after an incident.
When influential offender Mir Hadi approaches Khaani’s family to settle the issue but surprisingly pigeon-hearted Khaani shows immense resistance. Mir Hadi gives them death threats, terrified them and his intimidating behavior pushes Khaani to stand like an iron wall in front of him. Khaani’s chivalry and bravery melts Mir Hadi’s heart and he falls in love with her.

2. Numm-Watch it for Fawad and the layers. The story is inspired from Rajinder Singh Bedi’s Novel Ek Chadar maili is.
Numm is a tale of sadness , oppression, tyranny and rebellion , based on the unwise ritual of “Vani”. The main characters are Wali Bakht, Mahjabeen, Neelam and Sikander Bakht. The story starts when an older girl is married to his kid cousin in the name of VANI and is having trouble in keeping the relation. Things become even more wearisome when Wali returns home from his international educational trip and is forcefully married to an eighteen year old rebellious girl Neelam who knows about Wali’s first marriage to Mahjabeen.
3. Sadqay Tumhare- watch it for Khalil and Shano’s raw story! It's based on the real life story of the writer
Engaged as children, cousins Shanno (Mahira Khan) and Khalil (Adnan Malik) fall in love but their parents' turbulent past casts a long, dark shadow over their relationship that can never be shaken off.
