I think this is the first time Shaurya has witnessed someone's struggle to get something as basic as education, I mean he comes from a place of privilege and hasn't had the opportunity to see or be exposed to ground realities. Education is something his own siblings take for granted.
Secondly, as a teacher he is able to see her potential and does not want that brilliance to go waste, it also helps that he did not meet Anokhi as a prospective bride because then the conditions would have been there from day 1. Since he is already falling for her and taking pride in her work these two things are going to synchronise gradually like he would want all of Anokhi including her dreams
He has also seen that though Anokhi has left home she still longs for her father's affection, this might help him see that it's not the choice that is wrong but to actually place these women be it Anokhi or Aastha to choose in itself is wrong! I hope this is something we get to see here I went and read the description/blurb of the original and regional versions none of them actually focus on their differing ideologies Mohor's simply talks about professor and student being at loggerheads and falling in love, the tamil, telugu, malayalam versions talk about the FL's studies, dreams and ML's mom hate while only the marathi version mentions the ML hating ambitious women. So SAAK is the only version pitting the ideologies against each other and it was once again highlighted in today's episode I am sure makers have a plan on how to proceed with this because like Ash said he is not going to outright make demands for her to quit her education or career but getting there to reach that acceptance is going to be a beautiful journey because Shaurya wanted a life partner who would prioritise him, even with Shagun it was all about his demands and his wants but with Anokhi there is no "me" its like just be here with me that's enough.
