For The Marination You Need:
β’ Β½ kg Boneless Chicken
β’ 200 grams Yoghurt
β’ 1 tsp Red Chilli Powder
β’ Salt, to taste
β’ 2 tsp Ginger-Garlic Paste
β’ 1 tsp Dry Fenugreek Leaves
β’ 2 tsp Lemon Juice
For The Gravy You Need:
β’ 2 Onions, Chopped
β’ Β½ tsp Cumin Seeds
β’ 3 Green chillies, chopped
β’ 3 Tomatoes, chopped
β’ 10 Cashew nuts
β’ 10 Almonds
β’ 1 tsp Red Chilli Powder
β’ 1 tsp Coriander Powder
β’ Salt, to taste
β’ Β½ tsp Dry Fenugreek Leaves
β’ ΒΌ cup Fresh Cream
β’ 1 small coal piece (for smoking)
β’ Β½ cup Butter
β’ 1 Bay Leaf
β’ Food Color (optional)
Step One:
Start by thoroughly cleaning the boneless chicken and cutting the pieces into small chunks.
Step Two:
Next, you want to heat some oil in a wok, and deep fry the marinated chicken pieces till light golden in colour
Step Three:
Once you have fried all the pieces of marinated chicken, drain it off excess oil and set aside.
Step Four:
Once the onions have softened, add in the chopped tomato, cashew nuts, almonds, red chilli powder, coriander powder, dry fenugreek leaves, bay leaves, and salt. Cook this mixture.
Step Five:
Once the onion and tomato mixture has cooled down, transfer the contents into a blender. Grind the mixture into a smooth paste.
Step Six:
You need to heat the wok with 1/4 cup butter and add ground paste as soon as the butter has melted.
Step Seven:
Allow the added butter to blend in with the rest of the curry, and continue to let the paste simmer for another four to five minutes.
Step Eight:
Next, youβll need to add in two cups of boiled water, mix well, and cover with a lid to allow for the gravy to cook for a further five minutes.
Step Nine:
Next, in the pot, create a small space and fashion a bowl out of aluminium foil, and place it in the centre. Put the heated coal into the bowl, and pour one teaspoon of clarified butter onto this.
Step Ten:
Your butter chicken is ready. Transfer the gravy into a serving dish, and garnish with a dollop of butter or fresh cream, and coriander, and serve hot with rice or roti.
