Have been to China twice and the capital and big cities in general have very clean palettes and amazing world cuisine wale restaurants. Have had strikingly authentic Indian food there in the Taj Pavilion and the Ganges Indian. There is good quality vegan and vegetarian food available too. I've been to just Beijing and Shanghai though. Don't know about smaller towns.
What I know is that whatever you want to eat in China you can get it in their market. The' eat anything you want' motto is usually on the rural side of things because in the big cities globalisation has happened so they maintain an image and don't outrightly sell you something less accepting. They have special 'meat eating' rooms for it that's not open to the gen public, tourists or visiting work executives like me.
Interesting they have vegetarian and vegan stuff too, thought that would be very rare there.. did read that the eat-any-living-thing happened more on the rural side or among the elite classes who had a taste for exotic wildlife.
