Both. They have different names in different area also they are made differenly except for the fried rice bowl. Thats same everywhere 😆 The pic u posted is Pani Puri cause there is mint water in it. Its from the west side. Gol Gappa is from North and Phuchka is from east. I m not very sure between the difference in Gol Gappa and Phuchka but since I never had sweet water in Phuchka during my childhood I would say thats the difference between the two.

You have tried the BOSS of them. No need to try the others. But I would suggest Puri/Bhubaneswar Phuchka to you if you ever go to Orissa. Its better than Kolkata.

For all those asking phuchka filling....it has potato plus yummy ghoogni plus onion mix plus mostly tarmarind water.
