I rewatched that scene but it didn’t look like he was going to hit her.. just some normal gesture in anger while saying shut up.. don’t know why she said that.. maybe wanted to over exaggerate in front of Rhea...

One way of Ranbir knowing the truth is as we all know Rhea is very stupid and is really flying high.. so in her over confidence she asks or says or blurts out something related to break up in front of Ranbir.. and he can become suspicious about it.. This can be very interesting.. just discussed in the AT
