Parathas recipe Ingredients:


For Paratha Dough (atta):

Wheat Flour 2 Cups
salt 1/2 tsp
oil
Ghee/butter/Margarine 1/2 cup
water


Method:

If using Butter bring it room temparature.

Mix flour salt & required water to make a dough consistency.
Rub oil over & knead it soft .Let it rest for an hour.

With a help of a rolling pin take a lemon sized dough .
Roll it to a a small round & apply some butter /ghee to it.
Fold into two again fold the same. Start rolling to form a triangle.

Heat a flat pan ,when it gets hot add the paratha and let it cook for a minute.
When it starts to get small bubbles turn around & add a small teasp of oil
around the paratha. When the brown spots appear take it out & keep it in an in a covered box & serve.

Here is another method that produces a very nice paratha.

3 cups wheat flour
1 cup all purpose flour (maida)
1/2 cup of rawa
6 tbsps of melted ghee
1 egg slightly beaten (if you are a pure vegetarian you can omit it but it adds a lot of richness)
Milk to bind the flour
salt about a tsp

Mix the dry ingredients and then stir in the ghee, egg and milk and make a pliable dough (not to hard, not to soft but definitely smooth).

Let it rest for atleast 2 hours.

To Roll use the following technique:

Roll out the dough balls into a small circle. Smear a bit of oil or ghee on the circle. Sprinkle some flour on the oil and then cut the circle from the center going out (like cutting a pie). Roll it in a clockwise direction to make afunnel. Now press the funnel down and roll. This will give you nice rings in the paratha.

Roast in a pan and then finish it off with some ghee or butter.

It is definitely not low fat. Enjoy
