I think an apt casting list would be this...

Shantanu-
Satyavati- Madhuri Dixit
Dhritarastra- Gulshan Grover maybe?
Gandhari- Sonakshi Sinha
Pandu- ??
Kunti- Kajol
Now here comes the twist..
Karna- SRK
(See I know this is awful and people will pounce on me for casting SRKajol as Mom-Son but SRK has that tragic ailment in him and nobody but Kajol seems to come in mind for Kunti. Sorry. I am also a SRKajol fan)

Yudhi- Aamir
Bheem- Salman
Arjun- Hrithik (If he is considered too old, then we may have someone else?)
Nakul- Siddharth Malhotra
Sahdev- ??

Draupadi- Deepika Padukone (Do suggest others too)
Subhadra- Alia Bhatt
Chitrangada- Illeana D'Cruz
Uloopi- Shraddha Kapoor

Duryodhan- Ajay Devgn/Ranveer Singh
Dusshashan- Arjun Kapoor
'Bheeshma- Amitabh
Drona- Naseeruddin Shah

Karna- Ranbir Kapoor (frustrated, sad face, sacrifice)
RK n Shahid are interchangeable in Karna and Yudhistir
Yudhister - Shahid Kapoor (humble brother)

Arjun - Ranveer Singh (impulsive, mischief and OTT)

Krishna- Salman Khan

Draupadi- Deepika

Kunti- Neetu

If I could choose the starcast for Mahabharat, the list would be something like this-

Shantanu- Anil Kapoor

Ganga- Karishma Kapoor.

Satyabati- Kareena Kapoor.

I think Satyabati's character is very interesting IMO.

Young Bhism- Sonu Sood

Old Bhism - Amitabh Bacchan.

Dronacharya- Kabir Bedi

Bidur- Paresh rawal

Dhritarashtra , Gandhari- Cast whomever u want.

Pandu- John Ebraham

Young Kunti- someone from South, I think either Kajal Aggarwal or Tamanna Bhatya

Madri- Cast any model, newcomer you want.

Old Kunti- This one is important, Neelima Azeem or Shephali Shah

Yudhisthir- Abhisekh Bacchan

Bheem- Ranveer Singh

Arjun - Ranbir Kapoor

Nakul Shahdev- Cast whomever u want.

I know Ranveer doesnt look older than Ranbir, but thoda sa adjust karlo😆. Actually Bheem is one of my favorite character in MB and can't see Salman Khan playing him. I want this Khandan to stay away from MB. Another reason is I want DP to play Draupadi, so it will be nice to see her getting married to both of them for once- 😆 😆. Ranveer can play Arjun too but unfortunately Ranbir cannot play Bheem, so only way you could fit both Ranbir and Ranveer in the cast is like this.

Draupadi- Deepika

Subhadra- Alia/ Shraddha

Hidimba- now this one is tricky , she doesnt necessarily look like Rakshashi, like fat,dark and all. I mean she just needs to look like unconventional so may be Kalki, or if u insist on being dusky then illiana.

Krishna- Amir Khan/ Akshay Kumar. Amir- Ranbir as Krishna- Arjun would be more interesting compare to Akshay- Ranbir.

Karna- Hrithik Roshan

I think Hrithik would b perfect for karna. Even though Arjun and Karn are each other's nemesis,they are not of same age. Karna is Kunti's eldest son so he is even older than Yodhisthir, so Ranbir-Hrithik = Arjun- Karna

Duryodhan- Sahid Kapoor

Because Sahid rocks in negative roles, kaminey, Haider- darker roles, brighter sahid. And Duryodhan was again a complex character.

Dusshasahan- Kissi ko bhi lelo, Arya Babbar type.

Assyathama could be Vidyut Jamwal.

Jayadrath- Arjun Rampal.

Dhristdyumna- Sidhartha Malhotra.
