"I think the reason why MasterChef Australia connects is because it is very relatable" - Diana Chan

In an exclusive conversation with us, we asked her about what she feels is the reason that MasterChef Australia continues to be a hit in India, her favorite Indian food and other things.

After creating a mark with her stint in MasterChef Australia and having won the ninth season, chef Dian Chan has been consistently spreading her wings and exploring different cultures. As we know, the lady recently collaborated with Conosh to curate a Malaysian-inspired Indian cuisine.

In an exclusive conversation with us, we asked her about what she feels is the reason that MasterChef Australia continues to be a hit in India, her favorite Indian food and other things.

Q. Food tastes and preferences are always so subjective and varied, especially in a country like India. Do you feel there is still a common thread or common factor you see that you like to focus on while catering to people and their tastes here?

I think the Indian palette is quite used to strong and bold flavours. So, while creating a menu for the Conosh dinners, I was aware of this, and I think it really comes down to what you're used to. I like to highlight local ingredients as much as possible and serve honest food with flavours that I'm passionate about. 

Q. With MasterChef Australia continuing to be a force now airing its 15th season, what is the factor that you think connects the most, not just in Aus but in India as well?

I think the main thing that connects people from all around the world to watch the Masterchef Australia series is the fact that the show is approachable. It showcases everyday Australians who have a passion for cooking, and it's relatable to many home cooks all around the world, especially in India.

I think the best way to tackle this question is to ask myself, what would I eat time and time again! That answer would be dosa. I not only love dosa in different forms like rava, onion, and masala, but I love the memories it brings me

Q. What is your favourite food of all time when it comes to Indian cuisine?

Can't believe you're asking me this. It's like choosing your favourite child!! I'm a simple girl when it comes to comfort food, and I think the best way to tackle this question is to ask myself, what would I eat time and time again! That answer would be dosa. I not only love dosa in different forms like rava, onion, and masala, but I love the memories it brings me. When I was a kid, my grandmother would take me to an Indian restaurant for breakfast to eat Indian rotis, and dosa was my all-time favourite, apart from Malaysian roti canai, of course. It's not just the bread that's good, I like the condiments and sauces that go with it, like coconut chutney and mutton curry. Banana leaf rice would be up there, too! It's a once-in-a-blue-moon thing as we often eat too much and end up in a food coma afterwards! 

Q. Have you tried the local street food in India? If yes, what has been your favourite, and what was the food that took you by surprise?

Yes, I have. I like Jalebi. When made fresh from the hot oil, it's always so good. Also chaat, it's always fun and full of textures and flavour.
