His rection to what happened with Nimmi was more Shame - that it happened to 'my' sister (also goes with all the 'my' wife dialogues in Goa). His reaction to the Bhavani dream was fear and later shame (I am like Rajeev). He wondered if apologising to her will be enough. Tried to but couldn't.
He mentioned about 'do I need to apologise where there is no love? - like with you?' Came up with the annulment papers - think he mentioned it as a 'gift for helping Nimmi' and her 'freedom'.
Perhaps after noticing her annoyance in being given the papers, he brings up 'i and u'. Now... he knows what she said when she was intoxicated (on cough syrup of all things). He perhaps wants her to admit it, bring her in the place where she says she loves him and hence she wont sign the papers... This i and u sequence would've made more sense and wouldn't have felt manipulative if the paper thing was not done.
For Ammu, I've said it often, her experience around Virat is more about brain freeze things where she is stunned and doesn't know how to make sense of things. She did quite a few things, even cooked up a plan with Dildaar, until the headlight shined in her eyes when he came up with the papers... and her brain gets reset again. She went back to family things again in todays ep and then he brings up another thing to make her say 'there is nothing b/w I and u???' or whatever he wants her to remember and say.
There was never any guilt in Virat... there was shame that he is now akin to Rajeev and wanted to save face... by apologising which he didnt follow up on. He 'freed' her by giving her the annulment papers but then wants her to realise that she loves him (as she had arguably confessed in an intoxicated state). While hatching the fake wedding plan he was congratulating himself that 'she wants to marry you'.
One dialogue, which I think was deliberate was 'aapke ghar me fa box...' one - when the thing hits the fan, he will remain 'aapke' not 'humare'... which is another 'stunned' reaction this time not from him / what he did but what happened.
