First Rishi Rishyashringa who conducted the Putra Kameshthi Yagya, which resulted in Narayana's descent in the world.
Second Rishi Vashishta, the kul guru of the Raghu Dynasty
Third Rishi Vishwamitra,
Fourth Rishi Atri, the husband of Anusuya
Fifth RIshi Agastya
Agastya taught Rama the 'Aditya Hridayam'- a stotra in praise of the Sun God which when chanted with sincerity, makes the person victorios. Rama recited this just before killing Ravan
Finally Rishi Valmiki.
The meetings with Sutikshna and Sharbhang in Aranya kand are significant, among others. And then there’s Shabri’s guru Matang who cursed Vaali. Rishi Kanva and Kandu are cited by Shri Ram when he explains his sharnagat policy. Durvasa appears in Uttar Kand. There’s probably way more too that we haven’t listed.
I have very limited knowledge in comparison to Mytho forum members. based on readings and Ramayana marathons, I remember some names and some i searched from the scenes I remembered. If I mentioned any wrong/ambiguous name then let me know. I will edit the post :)

Shuka was the son of Vyasa, so he was a sage before getting cursed.
Kapila Muni- I think he was mentioned sometime in Ramayan- but not sure
as per some stories, sage Ashtavakra cursed Kabandha for laughing at his physical appearance; not directly mentioned in RS/AS Ramayana.
Dashratha was also Rishi Kashyap (not saptrishi one) in his previous life
not so confusing cases.
Ravan, Kumbhakaran, or Vibhishana were brahmin but not sages- so, not mentioning.
After deadly encounters with Lord Rama, Mareech transformed himself into a saint but he wasn't really a sage.
Surya bhagwan was Hanuman ji's Guru but not in sage category
Shiva- he is everything and much beyond maharishi.
