hello friends...

   Kerala is known for it's spicy n tasty foods...i would like to share some traditional Kerala recipes with u all...

                       Kappa Vevichathu (Tapioca)

Ingredients:

  • Tapioca(Kappa) - 1 Kg
  • Grated Coconut - 1 cup
  • Green chillies  3-4
  • Small onion -1
  • Garlic- 1 slice
  • Jeera -1/4 tsp
  • Turmeric powder - I pinch
  • Coconut oil - 1 tsp
  • Dry red chillies - 3-4 Nos
  • Mustard seeds - 1/2 tsp
  • Curry leaf - 1 sprig
Preparation
  • Peel the tapioca and wash it.
  • Cut the tapioca into small cubes.
  • Grind all the ingredients from 2-7.
  • Boil the tapioca with salt and  enough water to cover it. Cook for 20 -30 min.
  • Drain all the water when it is cooked. 
  • Add little water and grind-ed ingredients into the tapioca. Mix well.
  • Heat oil in a pan. Splutter mustard seeds ,dry red chillies and the curry leaves and pour it to the semi smashed Kappa(tapioca)
  • Mix well.

                              Fish Curry (Kottayam style)

 Ingredients

  • Fish - 1/2 kg, cut into medium size pieces (any fish)
  • Fenugreek (uluva) -1/4 tsp
  • Ginger & garlic -1 1/2tbsp, crushed into a fine paste
  • chili powder -1 - 2 tbsp
  • Coriander powder -11/2 -2 tbsp
  • Turmeric powder-11/2tsp
  • Cocum/kudampuli -2,3 pieces
  • Curry leaves
  • Salt
  • Coconut oil

Preparation

  •  Soak cocum in 1tbsp of water for 5 minutes.
  •  Heat oil in a meenchatti (earthen ware) or a pan.
  •  splutter fenugreek.
  •  Add crushed ginger garlic paste & stir well for sometime.
  •  Add curry leaves & saute till it becomes soft.
  •  Add the powders(chilli,coriander,turmeric) and salt .
  •  Fry till oil starts appearing.
  •  Add cocum and fish pieces and mix well. (it will be safer to rotate the    pan to mix the fish and the masala coz may be the fish pieces will get broken while mixing with a spoon)
  • Add required amount of water.
  • Cook till the fish is done & gravy becomes thick. (around 20 -25 minutes on low flame).

                        Rice Pathiri ( Rice Chappathi)


Pathiri is one of the specialities of kerala muslim cuisine.

Ingredients

  • Salt - 1/2 tsp (to taste)
  • Rice flour(roasted)-1 glass  and some extra for rolling
  • water - 1 glass

Preparation

  • Boil water.Add enough salt
  • Slowly add rice powder and stir continuously to avoid lumps.
  • Cook  till all the water is absorbed.
  • Remove from heat and pour the contents into a big plate.Set aside till cool enough to handle.
  • Note that you have to knead when it is warm.
  • Knead it and  make a dough.you have to knead it very well using both ur hands.
  • Note that a well kneaded dough makes the pathiris soft and please don't add extra water or powder while kneading. if needed, wet hands .
  • Divide dough into small balls. press it between palms as we do for chapattis.
  • Sprinkle with rice flour and roll out into thin round pathiris.
  • Heat a tawa over moderate heat. Place a pathiri on tawa and cook both sides till it puffs up.But be
  • careful,the pathiris should not be brown.
  • have it with cocunut milk and chicken curry or mutton or beef curry.



                                 Chicken Curry


Ingredients

  • Chicken - 1 kg
  • Chilly powder - 2 tsp
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 3 tsp
  • Garam masala powder - 1 1/2 tsp
  • Pepper powder - 1 tsp
  • Ginger paste - 1 tsp
  • Garlic paste - 1 tsp
  • Aniseeds(Perinjeerakam) - 1/2 tsp
  • Salt - As reqd
  • Curry leaves - A few
  • Cooking oil - 2 - 3 tsp
  • Onions(medium) - 3 nos(chopped)
  • curry leaves - a sprig

Preparation

  • Cut the chicken into medium sized pieces.
  • Marinate the chicken with  turmeric powder and  pepper powder for 15 mins.
  • Heat oil in a pan.
  • Splutter aniseeds.
  • Add sliced onions and fry until it turns golden brown in color.
  • Add ginger and garlic paste and stir well. 
  • Add coriander powder,chilli powder,garam masala and stir well.
  • add chicken pieces followed by water and salt and cook thoroughly.
  • Add curry leaves.
  • When the gravy becomes thick, remove from the stove.
